My husband gets this look on his face when he’s really excited about something. So, when I got home from work one day and he had three pounds on jalapeno peppers and that goofy grin I knew something was up. Then I watched as he wheeled out the big green egg – in the snow no less – and chopped up all the peppers.

He came inside and excitedly told me that we were going to make our own Chipotle Powder. I had a lot of questions of course, how on earth did he get this idea, why chipotle powder, and why right now, etc.

Once I saw how seamlessly he created his own chipotle powder, I was a little disappointed that he didn’t come up with it in time to make homemade Christmas gifts! How cool would that have been?

I would not recommend drying the peppers in your oven, as the smell is very strong. Also, you will need to stand back a little bit when you open your food processor, otherwise you will land yourself in the middle of a coughing fit!

Chipotle Powder

yield: 6-8 SERVINGS

cook time: 3 HOURS


3 pounds jalapeno peppers


1. Cut the top off of each pepper and then cut each one in half. Preheat your grill to 125 degrees.

2. Place the peppers directly onto the grill. The idea here is to dry the peppers out, but not cook them. So, low heat for a longer period of time is the name of the game.

3. About 3 hours later the peppers will be dry to the touch. Take them out and let them cool.

4. Dump the peppers into a food processor and grind the peppers until they are a fine powder. Store in an airtight container.
