I am a firm believer that cocktails should pack a punch and be subtle at the same time. It’s a delicate balance, and not all cocktails can pull it off, but this one is the perfect example of what I’m looking for.

I had six days off over the Christmas and New Year’s holiday and as glorious as it was, I have decided that it was too much time off of work. *Gasp!*

This was my first vacation from work that I didn’t assign myself a laundry list of things to get done before going back to work. You see, every time I do that to myself, I go back to work without feeling like I got a break at all. So, I made a point this time around to give myself an actual break. No laundry list of things to get done, just do what I want when I want.

Which means… I watched three seasons of a new show, watched it snow, took care of the ice dams on my house, went to my first Vikings game that just so happened to be the last one in the metrodome, and I even shoveled for the first time in my life {aren’t you proud mom?}. On top of all of that, we spent time with our friends and soaked up as much time with family as possible.

This cocktail was my contribution to Thanksgiving dinner, and since it was such a hit, it was requested at Christmas dinner as well. This cocktail is the reason some of you got a text message on Thanksgiving that read “Happy Birthday!” instead of “Happy Thanksgiving” you know who you are ladies, and thanks for not judging too harshly! 😉

Apple Cider Cocktails

yield: 6-8 SERVINGS

prep time: 10 MINUTES

cook time: 45 MINUTES

total time: 1 HOUR


8 cups of apple cider
1 cup of Captain Morgan Rum
1 and 1/3 cups of Goldschlager
1 pomegranate, deseeded
Cinnamon and Sugar, for the rim of your glass


1. Deseed your pomegranate and set aside. Pour your apple cider into a medium saucepan and simmer on low for around 40 minutes until it reduces and gets a bit thicker.

2. Set the apple cider aside to cool. Add in the captain morgan and the goldschlager and stir until well combine.

3. Pull out two small plates, on one of them add a couple centimeters of water. On the other, mix cinnamon and sugar together. Flip your low ball glassess upside down in the water and then into the cinnamon and sugar.

4. Fill each glass with ice and pour the apple cider mixture into the glass. and top with a few pomegranate seeds to up the ‘pretty’ factor. Serve cold.
